Masala Tofu Recipe: Ingredients
For the Gravy:
- 1 tbsp mustard oil
- 1 medium onion, finely chopped
- 2 tomatoes, pureed
- 3-4 garlic cloves, minced
- 1-inch ginger, grated
- 1/2 cup green peas (optional, for a Matar Tofu variation)
- 1 tsp cumin seeds
- 1 tsp garam masala
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1 tsp red chilli powder (adjust for spice)
- 1/2 cup coconut milk or cashew cream (for creaminess)
- Fresh coriander leaves for garnish
For the Tofu Marination:
- 250g GDM’s Extra-Firm Tofu (cubed)
- 2 tbsp mustard oil
- 1/2 tsp turmeric
- 1/2 tsp red chilli powder
- Cornflour paste
- Rock salt to taste
Instructions
- Prepare the Tofu:
In a bowl, mix turmeric, chilli powder, and salt. Toss the tofu cubes to coat evenly. Heat oil in a pan and lightly fry the tofu (coat the tofu with thick cornflour paste before frying) until golden brown. Set aside. - Make the Masala Base:
Heat mustard oil in a pan and add cumin seeds. Once aromatic, add onions and sauté until golden brown. Add garlic and ginger; cook for another 2 minutes. - Build the Gravy:
Stir in tomato puree, garam masala, coriander powder, turmeric, and red chilli powder. Cook until the oil separates, indicating the spices are well-cooked. - Combine Tofu and Gravy:
Add the green peas (if using) and coconut milk/cashew cream. Simmer for 5 minutes. Add the tofu cubes and gently mix to coat them in the gravy. Cook for another 5 minutes, adjusting salt and spice levels. - Garnish and Serve:
Garnish with fresh dhaniya and serve hot with steamed kodo millet, kutki millet, rice, naan, or roti.
